In Chinese cooking, there are lots of oils prepared before cooking that contain the flavor of ingredients.
For instance, onion oil, sesame oil, are among the popular one even at home nowadays. In fact there is prawn oil too. Fry the prawn shell, it can be used in making Chili Prawn. The prawn flavor will add a more tasty flavor into the dish.
Don't throw away the shells after fried. Add in some salt and pepper or chili powder, it taste great just like on of your chips. You can go crazy if you ever try to have it with beers.
Another appetizer for you. Deep fry prawn with onions and you can serve it as it is. You might want a beer or rice too!
