Chinese Soup - Pig Tail with Pear

My favourite part of the soup is slowly savoring end of the pig tail with a wee bit of soya sauce, l convinced D he would not like that particular part so that I can have it ALL to myself...muahaha. The tail is good to eat as it seems the piggy is happy thus wagging its tail right...

Ingredients : dried longans, red dates, wolf berries, pear and a happy pig tail (probably a young and active piggy - lean with a little fat and taut skin)
