This is the fermented and unsalted black soybean (Douchi in Chinese) that was used to stir fry with ox tongue and veggie. There are salted and unsalted type though.

For Japanese, ox tongue normally is eaten with BBQ style. It's best to enjoy the ingredient's original flavor that way. With Chinese ways of cooking, one finds lots of in depth how to go with other sauces and veggie in a different ways.

I am not sure yet if I would like to be one Chinese cook. But there are lots of things to learn from Chinese cuisine.

Chinese cooking has lots of complicated ways to cook to me. On the other hand, Japanese has lots of ways trying to enjoy the original flavor of ingredients. I do hope to learn more about the two combinations.

Both has it's good points. I am trying to figure my own style; the Southeast Asian way.
