Hard to cook at home, so most Chinese buy these foods from people who specialize in their preparation. You can buy a piece of duck, whole or chopped to order, or the whole varmint. Same goes for the pig. A good rule to follow is: Never eat duck unless it's prepared by Chinese people or French people. Everyone else turns it into a greasy mess. That's domestic duck. Wild duck is almost another kind of animal in terms of how you prepare it. Wild duck is almost always great eating.
